Mark's Skillet Zucchini Cornbread

·         1 med zucchini, grated
·         2 med onions, grated
·         3-4 carrots, grated
·         3 eggs
·         Jiffy Cornbread Mix

Grate medium zucchini, drain water then grate couple onions and three or four carrots and mix, add three eggs and box of Jiffy Mix cornbread and mix all together.  Cook batter in skillet with olive oil and turn it over after a few minutes. Easy to make, browns real nice, and tastes delicious!
